Founded 2009 by Greek-American chef Elias Cairo, Olympia Provisions was Oregon's first USDA-approved salami producer and has become the Pacific Northwest's reference cured-meat brand. The original Southeast Portland restaurant pairs a charcuterie counter with a sit-down deli; the wholesale operation distributes salami, dry-cured pork, and pâtés nationally through specialty grocery and direct online sales. Cairo's Greek heritage shapes the line — loukanika (Greek-style fermented pork sausage with citrus and fennel) is distinctive; the chorizo Andalucia and finocchiona Liguria represent strong Italian/Spanish-style work.
Cookbook "Olympia Provisions" (2015) documents the recipes and is among the best American technical-charcuterie books.
