Curing regulations, DOP/IGP/AOP status, producer lists, and product availability all change over time. Coverage on this site may be out of date by the time you read it, particularly for niche producers and specific product availability.
Food safety disclaimer
Cured meat carries real food-safety considerations — particularly raw-fermented products, undercooked or uncooked products, products handled or stored incorrectly, and home-curing projects.
