Salamanca is the historic university city of Castile-León, founded by the Romans and home to one of Europe's oldest universities (founded 1218). The city itself is a UNESCO World Heritage site for its medieval and Renaissance architecture (the Plaza Mayor, the Casa de las Conchas, the Old and New Cathedrals). For cured-meat purposes, Salamanca is the practical gateway to the Guijuelo DOP zone, located 60km south in the mountainous southern part of the province.
The city has strong Iberico ham shopping (multiple specialty jamonerías in the old quarter near Plaza Mayor), excellent restaurants serving the regional Iberico tradition, and the cultural infrastructure (university, tourism, gastronomy) that supports serious food culture. Compared to Jabugo's remote village character, Salamanca offers a city-based approach to the Iberico universe — visitors can base in a beautiful UNESCO city while day-tripping to Guijuelo or staying for the urban food-and-architecture experience.
