Continental — cold winters, hot summers, dry year-round. The province sits on the Spanish Meseta at 800m+ altitude.

Salamanca province is the inland continental anchor of the Iberico universe — high-altitude (most of the province sits above 800m), dry, with sharp seasonal temperature swings. The Guijuelo DOP zone in the south is the famous part; the broader province also produces non-DOP Iberico products and contains both Fermín (in La Alberca, near the Portuguese border) and Joselito (in Guijuelo). The dehesa landscape extends west from Salamanca into Portugal; the broader region is one of the four classical Iberico cultivation zones.

Salamanca-style Iberico is distinguishable from Huelva-style by its drier character and more concentrated salinity profile.
