Atlantic coast in the south transitioning to Sierra de Aracena mountains in the north. The province has more climate variation than most Iberico provinces — coastal humidity in the south, mountain altitude in the north.

Huelva is the western Andalusian province where the Sierra de Aracena meets the Atlantic coast. The northern Sierra contains the Jabugo DOP production zone; the broader province also produces non-DOP Iberico products at various grade tiers. The Atlantic marine air influence — wetter, cooler, more seasonal variation — is what distinguishes Huelva-zone Iberico from the inland Salamanca and Extremadura zones.

Producers describe the regional microclimate as producing more 'aromatic' aging (less concentrated salinity, more developed bouquet of cured-pork aromas). The province also has a strong tradition of less-famous Iberico products: cured loin (lomo ibérico), Iberico chorizo, morcilla ibérica (blood sausage), and salchichón ibérico (Iberico salami).
