Cinco Jotas ("five J's" — the highest grade in the historical Sánchez Romero Carvajal classification system) is the premier producer of Jamón Ibérico de Bellota, and the brand most non-Spaniards encounter first when learning about Spanish ham. Production is concentrated in Jabugo, Huelva — one of four Iberico DOP zones — with the company owning the entire process from acorn-fed pure-breed Ibérico pigs grazing the Sierra de Aracena dehesa through to 36-48 month aging in mountain bodegas. The legs typically sell for $1,800-3,000 USD; 80g (~3oz) sliced packs at premium retail are the practical entry point for most US consumers.
Quality is genuinely category-defining; the marbled fat profile and acorn-derived oleic acid content distinguish 5J bellota from any other cured meat.
