Jabugo is the small mountain town in Huelva province whose name has become synonymous with the top tier of Spanish Iberian ham. The Jabugo DOP zone (renamed from DOP Huelva in 2018 to emphasize the specific village) operates in the Sierra de Aracena y Picos de Aroche national park at 600-1,000m altitude. The marine-influenced climate produces slower aging than the inland Iberico zones — bodegas regulate the seasonal temperature cycle but the underlying air is wetter and cooler than Guijuelo or Extremadura.

The result: slightly less concentrated saltiness, more pronounced marbled fat character, longer-developed aromatics. Cinco Jotas (formerly Sánchez Romero Carvajal) is the iconic producer based in Jabugo; the village contains a dozen or so other smaller producers operating under the DOP regulations. The Jabugo-vs-Guijuelo distinction is the central Spanish Iberico debate, comparable to Parma-vs-San-Daniele in Italian charcuterie.
