Continuously operated by the Falorni family since 1729 — making this one of the oldest continuous butchers in Italy. The flagship shop in Greve in Chianti is a destination for pork and wild-boar charcuterie; the macelleria itself is on the central piazza of the Chianti hill town. Specialties: traditional Tuscan finocchiona (fennel-seed salami), cinghiale (wild boar) preparations, and slow-aged Tuscan prosciutto.
Production scale is small but distribution has expanded — limited US import through specialty channels (Eataly, some upscale grocers). The Tuscan-Chianti regional character is genuinely present in the products in a way that mass-market Italian salami cannot replicate.
